As a parent, you will understand the struggles of encouraging your kids to eat healthily. Not only do you spend a fortune on nutritious snacks, but you also almost always end up throwing half of them away when they haven’t been touched. When most people think about healthy food, they think of leafy greens and superfoods like lentils and seeds. In reality, we have a huge variety of healthy food options right at our fingertips, and incorporating them into desserts is the ultimate hack for families with young children.

Healthy desserts don’t have to be expensive, and they certainly don’t have to be boring. The key to making nutritious treats that your kids will actually want to eat is by subtly incorporating natural and healthy ingredients into desserts without them even noticing. Here are fun and nutritious desserts that are easy to make and sure to be loved by your kids.

Strawberries and Cream Mousse

This strawberry and cream dessert is perfect for the summer weather and is full of essential vitamins and fibres to help your kids feel energised and full. This recipe involves a fresh batch of strawberries, light cream, lemon juice, vanilla extract and a generous amount of honey. Start by blending the strawberries together with your lemon juice and honey in a blender, and evenly divide one half of the mixture into the bottom of a couple of drinking glasses that you already have in the cupboard.

Next, in a separate bowl, whip together your light cream, vanilla extract and a small amount of icing sugar on top. Once it’s thoroughly mixed together, the mixture will turn stiff, so you’ll know it’s ready. With the other half of your strawberry puree, slowly pour it into the cream mixture and gently fold together until it’s evenly mixed in. Top the cups of strawberry puree with your cream fixture and refrigerate before eating. To finish, you can even add a couple of fresh strawberries on top.

Stuffed Dates

Dates are one of the most versatile fruits and can be used in a number of different ways to make deliciously sweet and nutritionally balanced desserts. Dates are naturally high in fibre, making them the perfect ingredient to encourage your kids to eat. They’re also naturally sweet, so it’s likely that your kids could enjoy eating them on their own! A recipe that consistently performs well with young children is dates stuffed with peanut butter and chocolate, although you really can choose any ingredients you like.

The most important step in this recipe is destoning your dates. It is possible to buy them already pitted, which will save you some time, but it’s just as easy to destone them yourself. Once all the stones are removed, you should be able to open the dates up and fill them with your peanut and chocolate mixture.

To create the peanut butter and chocolate mixture, fill a bowl with a generous amount of peanut butter and stir in chopped up chocolate pieces. For each date, scoop about a teaspoon of the mixture inside and spread it along the date evenly. To finish, sprinkle a small amount of sea salt over the top, which will bring out the flavour and sweetness of the chocolate. Once filled, you can enjoy them straight away, but if you have any spare, it’s a good idea to store them in the refrigerator.

Kefir Ice Cream

As creamy and delicious as ice cream can be, some brands and varieties are made with a ridiculous amount of sugar. Of course, there’s no harm in letting your kids indulge in cream-based ice cream now and again, but in the warmer months, particularly, it’s nice to have a healthier alternative as well. Kefir is primarily a milk drink that’s similar to yoghurt in its consistency, but it’s made through a fermentation process where bacteria and yeast are submerged in cows or goats milk. Kefir is a healthier alternative to yoghurt because the fermentation process releases billions of probiotics into the milk that are extremely beneficial to our gut health.

To make this delicious kefir ice cream, you will first need to purchase a bottle or two of plain kefir. Most major supermarkets stock kefir, and you will typically find it refrigerated in the dairy section. You can make any flavour of kefir ice cream that you like, but berries work particularly well and always go down a treat with young ones.

The recipe for kefir ice cream includes plain kefir, honey, berries and vanilla extract to form its base. All you need to do is blend all your ingredients together in a food processor, transfer them into a flat, freezable dish, and pop them in the freezer for around 4-5 hours. The result is a smooth, creamy ice cream that tastes just as sweet but is a more nutritious choice.
